Chicken Ranch Quesadillas

- 2 cups cooked shredded chicken
- 4 large flour tortillas
- 1 packet ranch-style seasoning mix
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 2 tablespoons sour cream
- 1 tablespoon chopped parsley (optional)
- 1 tablespoon butter or oil
- Salt and black pepper to taste
Method
- In a bowl, mix shredded chicken with ranch seasoning, sour cream, salt, and black pepper until well combined.
- Lay tortillas flat and spread the chicken mixture evenly over one half of each tortilla.
- Sprinkle cheddar and mozzarella cheese over the chicken. Fold tortillas in half.
- Heat butter or oil in a skillet over medium heat.
- Cook quesadillas for 2–3 minutes per side until golden brown and crispy, with melted cheese inside.
- Slice into wedges and garnish with chopped parsley if desired.
- Serve warm with salsa, ranch dip, or sour cream.
