For the Cupcakes

• 150 g unsalted butter, room temperature
• 150 g light brown sugar
• 3 medium eggs
• 125 g self-raising flour
• 25 g cocoa powder
• 1 tsp peppermint extract
• 1 tsp vanilla extract
• 150 g dark chocolate chips

For the Mint Buttercream

• 150 g unsalted butter, room temperature
• 300 g icing sugar
• 1–2 tsp peppermint extract
• Green food colouring

For the Decoration

• Chocolate sprinkles or cocoa dusting
• Mint chocolate sweets (such as Aero bubbles)
• Chopped chocolate pieces (optional)
