For the Crust:
1 1/2 cups chocolate cookie crumbs
1/4 cup sugar
1/2 cup unsalted butter, melted
For the Cheesecake Filling:
4 (8-ounce) packages cream cheese, softened
1 cup sugar
8 ounces semi-sweet chocolate, melted and slightly cooled
1 teaspoon vanilla extract
4 large eggs
1/2 cup sour cream
1/2 cup heavy cream
Instructions:
Prepare the Crust:
Preheat the oven to 325°F (163°C).
In a medium bowl, combine the chocolate cookie crumbs, sugar, and melted butter. Mix until the crumbs are evenly coated.
Press the mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes, then let it cool.
Prepare the Cheesecake Filling:
In a large mixing bowl, beat the softened cream cheese on medium speed until smooth.
Add the sugar and melted chocolate, and mix until well combined.
Add the eggs one at a time, mixing well after each addition.
Stir in the vanilla extract, sour cream, and heavy cream until smooth.
Assemble and Bake:
Pour the filling over the cooled crust and smooth the top.
Bake for 55-70 minutes, or until the center is set but still slightly jiggly.
Cool in the oven as described above.
Chill and Serve:
Refrigerate the cheesecake for at least 4 hours before serving.
Garnish with chocolate shavings or fresh berries.
